Some of us have never met a pumpkin-something we didn’t like. So, when the pumpkin spice latte comes calling, we answer without hesitation. Tall, short, hot, iced, 2% or oatmilk - we love them all.
What we don’t love? The sugar. You don’t even want to KNOW how many grams of added sugar are in a Starbucks PSL. We’ll tell you anyway. It’s 50. FIFTY GRAMS OF SUGAR. Now what-in-the-plaid-blanket-scarf is that about?!?
For the love of Autumn, we just knew we had to come up with something better than that.
What’s in a Sugar Free Pumpkin Spice Latte?
A latte is a specialty coffee drink with 2-3 shots of espresso, milk, and foam. And it is delicious.
The Pumpkin Spice Latte takes the standard latte to another level with hints of cinnamon, ginger, nutmeg, allspice, and clove. This magical combination of spices was made so famous by the pumpkin pie dessert that it also became a spice of the same name. You can buy Pumpkin Pie Spice in almost any spice aisle. Pumpkin Spice Latte also includes a sweetness element, which combined with the espresso, milk, and spices is a dessert and coffee in one.

ESPRESS-OHHHHH
One of the reasons lattes are so popular is because espresso just hits differently. It is a richer, deeper coffee flavor. Espresso is smoother than coffee, even though it is a dark roast. Expresso also has less caffeine than regular brewed coffee, so that 4pm PSL might not mess with bedtime after all. (If in doubt, go decaf. You can also just add milk and Sugar Free Pumpkin Spice Sinless Syrup to your morning coffee. It’s delicious however you choose to use it.
TO DAIRY OR NOT TO DAIRY
Even if you can tolerate dairy, milk has more sugar than unsweetened almond, soy, or coconut milk. Whole, 2%, even Skim milk all have about 12g of sugar per cup, compared to 0g for almond or coconut milk, and just 1g for soy.
Milk does have the advantage when it comes to protein with 8g per 8 fl.oz. Unsweetened soy has about 7g per 8 fl.oz., almond only 1-2g, and coconut milk 0g of protein.
The milk you choose will give your latte that creaminess that is so satisfying. Choose the one that you like best!
What goes on top of a Pumpkin Spice Latte?
If you’re making a latte for a coffee connoisseur, then by all means put only a whisper of foam on top or risk a withering side-eye from them. If you can’t be bothered with that kind of fussiness, top your Pumpkin Spice Latte however you like!
TRADITIONAL LATTE TOPPER
The latte will have a small amount of foam that naturally comes with the milk after it has been flavored and frothed. Adding extra foam doesn’t make it a cappuccino. It just means you like foam! You do you, pumpkin.
FANCY LATTE TOPPER
For days when you’re feeling extra, why not top your latte with a sugar free whipped cream? Believe it or not, heavy cream - sometimes called “Whipping Cream” - has zero sugar. You can also use coconut cream or other plant-based cream to make your fancy topping.
Our favorite way to make whipped cream is to add a little Sugar Free Sinless Syrup to the cream before whipping. A glass or metal bowl, a kitchen whisk, and a little endurance is all you need to turn the thick cream into a fluffy dessert topping. Salted Caramel or White Chocolate Sinless Syrups complement the Pumpkin Spice Sinless Syrup in the milk soooooo well.

Make it Iced! Iced Lattes are 50/50 Ice and Latte, so grab a bigger travel mug if you want to enjoy this specialty coffee on ice. Even better, why not make it with Coffee Cubes to keep that big espresso flavor front and center.
