The Peanut Butter Banana Bites will last all week in your refrigerator. (You can also freeze them if you make a double batch!)
Packed With Protein
The peanut butter is already a good source of protein, but you can also add a scoop of protein powder to make these a macro snack made in heaven.
Look for creamy peanut butter with no sugar added. If you choose to add protein powder too, you may need to adjust your banana ratio to make sure the ingredients combine well.
Low-Sugar, Good Carbs
While not strictly keto, these Bites are a low-sugar food.
Oats are a heart-healthy grain and are low on the glycemic index, so many low-carb followers consider them a "good" carb.
Mash your bananas first. If the bananas are a little over-ripe, no problem. That will make the mashing easier.
Add your ingredients to a bowl and mix well to combine. Pop the mix in the freezer for a few minutes to make rolling the Bites easier (and less sticky!).
Scoop Your Peanut Butter Banana Bites
This recipe will make about 20 Bites.
You can use a cookie or ice cream scoop or just a spoon. Scoop enough mix to roll a ball about 1 1/2 - 2 inches. You can press or roll them with your hands until you get a shape you like.
Store in an airtight container in your refrigerator and enjoy!
